Belgian Waffles

Belgian Waffles

2 c. all purpose flour

1/4 c. white sugar

4 tsp. baking powder

1/2 tsp. salt

2 eggs, separated

2 c. milk

1/2 c. butter, melted

1 tsp. vanilla

Separate the egg yolks from the whites; beat the whites until stiff peaks are formed. Set aside. Combine the dry ingredients in a large bowl. In a separate container, stir together the egg yolks, milk, vanilla and melted butter. Pour the wet into the dry ingredients and whisk until batter is smooth; gently fold in the egg whites. Heat the waffle iron; butter both sides (I butter between each waffle). Bake in the waffle iron until golden brown. Keep the waffles on a cooling rack while you prepare the rest of them. Recipe makes 6-8 waffles, depending on the iron size.
